Slice Evenly and Thin
Use a sharp knife or mandoline to slice potatoes into uniform, thin pieces (about 1/8 inch thick) for even cooking. Thicker slices may not crisp properly.
Fry or Bake to Crisp
Heat oil to 350°F (175°C) for frying, or preheat an oven to 400°F (200°C) for baking. Cook chips until golden brown, about 3-5 minutes for frying or 15-20 minutes for baking, flipping halfway.
